Zakwas buraczany- co to takiego?
Zakwas buraczany to coraz bardziej popularna kiszonka, która podbija serca osób dbających o swoje zdrowiem. Prawdziwa bomba witaminowa polecana przez lekarzy i dietetyków. Jest on bardzo zdrowy i prosty w przygotowaniu. Sam proces fermentacji odbywa się w obecności bakterii kwasu mlekowego podobnie jak w przypadku kiszonych ogórków czy zakwasu chlebowego. Przepis na zakwas buraczany:
Potrzebujesz:
– 1 kg buraków,
– ½ główki czosnku przekrojonej w poprzek,
– 4 liście laurowe,
– kilka ziarenek ziela angielskiego,
– 1,5 l wody przegotowanej i ostudzonej,
– 2 płaskie łyżeczki soli kamiennej,
– 1 łyżka soku z ogórków kiszonych.
Sposób przygotowania:
- Buraki dokładnie umyj, obierz cienko ze skórki i pokrój w plasterki lub małą kostkę.
- Pokrojone buraki, czosnek i przyprawy wrzuć do wyparzonego słoja.
- Wszystko zalej wodą z solą i wodą z kiszonych ogórków. Jeśli buraki wypłyną na wierzch, przyciśnij je małym talerzykiem ale nie przykrywaj całego naczynia.
- Słój lub inne naczynie przykryj ściereczką lub gazą i odstaw w ciepłe miejsce.
- Raz dziennie zbierz tworzącą się pianę, a następnie całość wymieszaj.
- Po około 14 dniach zakwas będzie gotowy.
- Zakwas należy przelać przez sitko wyłożone gazą, a następnie wlać to szklanej butelki lub słoika. Tak przygotowany wstawić do lodówki.
- Nie wyrzucaj ukiszonych buraków- można je wykorzystać na kilka sposobów, np. dodając do sałatki.
Polecany jest w celu:
– wzmocnienia organizmu podczas przeziębienia,
– leczeniu anemii,
– poprawy odporności organizmu,
– odbudowy flory jelitowej,
– obniżenia złego cholesterolu (LDL),
– uregulowania ciśnienia krwi, pracy wątroby i nerek oraz przemiany materii,
– poprawy kondycji włosy, skóry i paznokci,
– wzmocnienia wytrzymałości i sprawności fizycznej.
